I had always dreamt of visiting the north of Spain, an area often referred to as ‘green Spain’ in reference to the mountainous setting amongst lush vegetation and vast greenery. I can still taste the warm, nourishing regional dish called Fabada Asturaria, cooked with the local delicacy 'alubias blancas' - delicious!

A trek in the Picas De Europa National Park which has some of the highest mountains and most spectacular and memorable scenery I have ever seen, set against classic Spanish touches such as the little old Catholic Churches dotted in the local villages and some which sit amongst caves lodged in the side of mountains, all add not only to the culinary experience but rather to a visual one steeped in history and tradition with all of my favourite Spain touches!
